Chef Fred Eric is an artist. A conceptual artist whose performance art is edible. One of his most perfect works of art at the now closed Vida Restaurant on Hillhurst was the Ty Cobb Salad. Layered in a shallow square shaped ring with warm spinach, bacon, hard boiled egg, shredded duck confit, avocado, and a pink dressing flavored with Sriracha, it collapsed as you touched it with your fork. Sad, really, edible performance art disappears as you consume it. I guess that’s why foodies are so obsessed with photographing everything they eat. Like a postcard from a museum you just want to capture the memory of the Art for another time.
